easy delicious dreamy dessert: icebox cake

listen, if you've never tried an icebox cake before then you're seriously missing out. they are SUPER easy to make, in fact, you pretty much just put pieces together. once you slice on an angle, it looks fancy & tastes beyond delicious. it's sure to impress guests!

what you'll need:

box of chocolate wafer cookies
a half pint of heavy cream
vanilla

what to do:

combine the heavy cream & a bit of vanilla (perhaps a tsp) and whisk together. basically you want to whip that sucker until the cream becomes whipped creamy (one way to check is if it's sticking to the whisk).

to construct the cake (actually looks more like a log), start spreading the whipped cream on one side of a cookie & stack another cookie on that & spread more cream...and on & on & on. once you've used up all the wafers & the log is created, you'll want to cover the entire thing with more whipped cream.

pop that baby in the refrigerator for a few hours & you're good to go.

the longer the icebox cake sits in the refrigerator the better!
